Crunchy lemon salad with parmesan that is light, flavorful, and perfect with chicken, fish, or vegetables!
- 1 head Romaine lettuce, or 3 romaine hearts
- ¼ cup olive oil
- 2 large lemons, juiced
- 1/2 cup finely grated parmesan cheese
- Salt, to taste
- Cracked black pepper, to taste
- Rinse romaine and slice into quarters lengthwise and then chop into bite-sized pieces. Add the lettuce to a salad spinner and spin to remove excess water.
- Add the lettuce to a large bowl with the remaining ingredients and toss until evenly combined.
