Crunchy Lemon Parmesan Salad 

Crunchy lemon salad with parmesan that is light, flavorful, and perfect with chicken, fish, or vegetables!

  • 1 head Romaine lettuce, or 3 romaine hearts
  • ¼ cup olive oil
  • 2 large lemons, juiced
  • 1/2 cup finely grated parmesan cheese
  • Salt, to taste
  • Cracked black pepper, to taste
  1. Rinse romaine and slice into quarters lengthwise and then chop into bite-sized pieces.  Add the lettuce to a salad spinner and spin to remove excess water.
  2. Add the lettuce to a large bowl with the remaining ingredients and toss until evenly combined.
