Ingredients:
- 3 cans chickpeas, rinsed and drained
- 3 green onions, sliced
- ½ red pepper, diced
- 1 small or ½ large apple, diced
- 2 Tbsp fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
- 3/4 cup dried cranberries (or raisins)
- 1 lemon, zested and juiced
- 3 tbs red wine vinegar
- 1 tbs honey
- 1 tsp cumin
- 1 tsp cinnamon
- 1 tsp curry powder
- 1 tsp salt
- 1 tsp olive oil
Instructions:
Mix everything together in a large bowl. Store for up to 5 days in the refrigerator. Enjoy!
