- 2 cups old-fashioned oats
- 1/4 cup canned pumpkin puree
- 1/4 cup dried cranberries
- 1/2 cup pumpkin seeds, hulled (note these are green in color)
- 1 teaspoon pumpkin pie spice
- 1/2 cup honey
- Optional ingredients: ¼ cup mini chocolate chips or ¼ cup chopped nuts
Combine ingredients in a bowl. Wet your hands with water, take a handful of the mixture and roll it into 1-inch balls. Set on a parchment paper-lined baking sheet. Place in the refrigerator for 20 minutes (or the freezer for 10 minutes) to set, then transfer the energy balls to an air-tight container. May be frozen.
