1 can chickpeas, drained and thoroughly rinsed
¼ cup mint, ﬁnely chopped
2 tablespoons chives, ﬁnely chopped
2 green onions, ﬁnely chopped
Juice of 3 lemons
3 tablespoons extra virgin olive oil
1 teaspoon dried oregano
1. In a large salad bowl or mixing bowl, combine all ingredients.
2. The salad can be served at room temperature or chilled. It will taste best when given a few hours or overnight to chill in the refrigerator, to allow the ﬂavors to come together.
