Creamy Wild Rice Soup

This winter warmer is a healthy twist on a classic comfort food and includes Turmeric, a known cancer fighter.

Ingredients

  • 4 TB butter
  • 4 green onions, sliced (white and green parts)
  • 1/3 cup flour
  • 1 quart (4 cups) chicken stock or broth
  • 1 teaspoon turmeric
  • 1 teaspoon dried rosemary
  • ½ teaspoon white pepper
  • 1 cup grated carrots (about 3 large carrots)
  • 1 cup sliced mushrooms (optional)
  • 1 chicken breast, cooked & diced
  • 2 cups cooked brown & wild rice
  • ½ cup (4 oz.) evaporated milk

Instructions

  1. Melt butter in large pot over medium-low heat.
  2. Add green onions and stir for 2 minutes until soft.
  3. Stir in flour for about 2 minutes.
  4. Add chicken broth, spices, carrots, and mushrooms. Simmer about 5 minutes.
  5. Add chicken, rice, and evaporated milk. Simmer 2 minutes.
