Salad ingredients
- ½ bunch asparagus, trimmed and cut into bite-sized pieces
- 1 pint cherry tomatoes
- 1 medium red onion, cut into ½ inch rings
- 1 yellow bell pepper, seeded and quartered
- 1 red bell pepper seeded and quartered
- 2 Tablespoons olive oil
- Salt and pepper to taste
- ¼ cup fresh basil leaves
- ¼ cup feta cheese
Dressing ingredients
- 1 clove garlic, minced
- 1 Tablespoon balsamic vinegar
- 2 Tablespoons olive oil
- Salt and pepper to taste
Directions
Preheat grill to medium. Toss salad ingredients in a bowl. Grill vegetables, turning occasionally until browned and tender, about 5 to 7 minutes. Place and platter and sprinkle with cheese.
In a small bowl, combine dressing ingredients. Drizzle over vegetables. Can be served warm or cold.
