Quick Couscous with Vegetable

2 cups reduced-sodium chicken broth

1 cup whole wheat instant couscous

1 tsp. canola or olive oil

10 spears asparagus, grilled or sauteed & cut into 1 inch pieces

1 large red pepper, grilled or sauteed & diced

Fresh basil to garnish, optional

In a large microwave-safe bowl, bring chicken broth to a low boil.   Remove from microwave.   Stir in couscous.  Cover with a lid or plastic wrap.  Let sit for 5 minutes to allow couscous to absorb the broth.  Add oil and stir gently to fluff.  Stir in asparagus and red pepper.  Add basil if desired.
