Roasted Vegetable Flatbread Pizza Recipe
8 store bought Flatbreads
2 cups Shredded Mozzarella Cheese
1 cup Prepared Pizza Sauce
1Tbsp. Olive Oil
1/2 cup Shredded Carrots
1/2 cup Red and Green Pepper Strips
1/2 cup sliced yellow onion
1/2 cup Broccoli Florets
1/2 cup Cauliflower Florets
Oregano, Basil and Black Pepper to taste
Preheat oven to 375F. Toss Vegetables with oil and spices. Spread in a single layer on a baking pan. Roast for 10-15 minutes until caramelized. Cool.
Place 2 TB of pizza sauce on flatbread. Top with 1/4 cup mozzarella cheese. Top with 1/2 cup of the roasted vegetable mix. Place in oven until cheese is melted, approximately 5-10 minutes.
Makes eight servings
