Spinach Salad with Clementine’s and Red Onion

Full of fresh, cancer-fighting produce, this salad has only 6 ingredients.

8 oz. package baby spinach

4 clementine oranges (Cuties or Halos), peeled and sectioned

½ red onion, thinly sliced

1 Tablespoon orange marmalade

1 Tablespoon red wine vinegar

2 Tablespoons extra-virgin olive oil

Arrange spinach leaves on a large platter or individual salad plates. Top with orange sections and sliced red onion. Whisk together marmalade and vinegar.  Stream oil into dressing while continuing to whisk.  Right before serving, add dressing and toss well to coat.

Makes 4 servings.  Nutrition per serving: 114 calories, 1 g protein, 14 g carb, 7 g fat, 21 mg sodium.
