Baked Feta Fritters

Inspired by the classic Colombian treat buñuelos, these fritters are made with feta cheese and are baked in a donut hole pan instead of fried.

Ingredients

  • Cooking spray
  • 2 cups feta cheese
  • 1 cup cornstarch
  • ½ cup tapioca starch
  • ¼ cup sugar
  • 2 large eggs
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter
  • ⅛ teaspoon baking powder

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Coat a 12-hole donut hole pan with cooking spray and set aside.
  3. In a large mixing bowl, combine feta, cornstarch, tapioca starch, sugar, eggs, salt and butter.
  4. Knead dough with clean hands until cornstarch and tapioca starch are mixed throughout.
  5. Knead baking powder into dough.
  6. Roll into 12 balls and place in the prepared donut hole pan.
  7. Mist tops of fritters with cooking spray.
  8. Bake for 8 minutes, flip each fritter and bake an additional 4 minutes, or until fritters are golden brown and firm to the touch.
  9. Let cool in pan before serving.
