Broiled Portabella Mushroom

COOKING TIME 10 minutes ■ SERVES 4
This is a delicious sandwich recipe. It is best served warm – either freshly cooked or warmed in the microwave. Use a bought Italian dressing, or even better make your own vinaigrette.
4 fresh portabella mushrooms
1 medium onion, cut into 1∕4-inch slices
4 tomato slices
8 slices of whole-wheat or mixed grain bread
4 teaspoons of Italian dressing
DIRECTIONS:
- Brush the mushrooms and onion slices liberally with Italian dressing.
- Broil the mushrooms and onion for 10 minutes, turning the mushroom over after 5 minutes.
- Fill the sandwich with the mushroom, onion and slices of tomato.
