Cherry Berry Almond Clafoutis

An incredibly simple dessert to make, clafoutis is a great way to enjoy seasonal cherries and berries. Serve this with a scoop of ice cream or gelato at your next summer gathering! Clafoutis is the French term for a tart.

Serves 8

All you need:

1 cup fresh cherries stemmed and pitted.

1 cup fresh blueberries

1 cup fresh blackberries

4 eggs

1 cup whole milk

1/2 cup sugar

1/2 cup almond flour

2 tablespoons cornstarch

2 tablespoons melted butter.

2 teaspoons pure vanilla extract

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Nonstick spray

Toasted sliced almonds and powdered sugar, for garnish.

All you do:

  1. Preheat oven to 350.
  2. Coat a 10-inch pie plate or casserole dish with nonstick spray and add cherries and berries.
  3. Place eggs, milk, sugar, almond flour, cornstarch, melted butter, vanilla, cinnamon and salt in a blender and process until smooth. Pour over the fruit.
  4. Bake for 45-50 minutes, or until no longer jiggly in the center. Allow to cool for 10 minutes, then garnish with toasted almonds and a light dusting of powdered sugar.         By Chef Jen
