Be sure to use this mini scoop to scoop them into ice cube trays (I use these ones with lids!) and then put them in the freezer for 20 minutes. I PROMISE that the scoop and ice cube trays make it so much easier. If in a pinch, you can use your hands to roll them into balls, but I find it to be a big pain. I’d rather leave them in a bowl in the fridge and eat from a spoon than have to try to make little balls out of all of them, ha! They pop right out of the ice cube tray really easily.

- 1 cup oats
- ⅓ cup coconut
- ½ cup ground flaxseed
- ½ cup chocolate chips or raisins, optional
- ½ cup peanut butter
- 2 Tbsp. chia seeds
- ⅓ cup honey
- 1 tsp vanilla extract
Instructions
- Stir together ingredients. Use mini cookie scoop to scoop cookies onto cookie tray or ice cube tray.
- Place in freezer for 30 minutes to set, then put in container and store in fridge or freezer.
