Taco Stuffed Sweet Potatoes

  • 2 sweet potatoes
  • ½ lb ground turkey
  • 2 Tablespoons water
  • 1 Tablespoon taco seasoning*
  • ¼ cup guacamole
  • ¼ cup salsa
  • 2 green onions, sliced
  1. Poke holes in sweet potatoes, place in microwave and microwave on potato setting or on High for 5 minutes or until tender.
  2. While potatoes are cooking, place ground turkey in a large skillet and cook over medium-high heat until browned. Drain if needed. Add 2 Tablespoons water and taco seasoning, stirring to combine.
  3. Cut open potatoes and stuff with desired amount of meat filling, guacamole, salsa and green onions.

*Homemade taco seasoning:

  • 2 Tablespoons Chili Powder
  • 2 teaspoons ground Cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon salt

Makes 2 servings. Nutrition per serving:  328 calories, 26 g protein, 31 g carbohydrate, 12 g fat, 6 g fiber, 594 mg sodium, 827 mg potassium, 447% DV (daily value) Vitamin A.
