- 2 sweet potatoes
- ½ lb ground turkey
- 2 Tablespoons water
- 1 Tablespoon taco seasoning*
- ¼ cup guacamole
- ¼ cup salsa
- 2 green onions, sliced
- Poke holes in sweet potatoes, place in microwave and microwave on potato setting or on High for 5 minutes or until tender.
- While potatoes are cooking, place ground turkey in a large skillet and cook over medium-high heat until browned. Drain if needed. Add 2 Tablespoons water and taco seasoning, stirring to combine.
- Cut open potatoes and stuff with desired amount of meat filling, guacamole, salsa and green onions.
*Homemade taco seasoning:
- 2 Tablespoons Chili Powder
- 2 teaspoons ground Cumin
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon salt
