Mediterranean Pasta Salad

Ingredients

  • 2 cups cooked whole wheat orzo pasta
  • 1 tablespoon minced garlic
  • 1 red onion, diced
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 1 orange pepper, diced
  • ½ cup sun dried tomatoes, drained oil
  • 2 tablespoons oil (reserved from tomatoes)
  • ½ cup crumbled feta cheese
  • 1 tablespoon Italian seasoning

Instructions

  1.  Drain sun dried tomatoes, reserving 2 tablespoons of oil.
  2.  Place tomatoes in a food processor and pulse until finely chopped.
  3.  Heat reserved oil in a skillet, adding garlic, onion and peppers. Saute for 3-5 minutes.
  4.  Place pasta in a bowl, add pepper mixture, sun dried tomatoes and Italian seasoning. Mix well.
  5.  Sprinkle feta cheese on top.
  6. Dish can be served warm or cold.
