This easy, comforting, yet healthy dish freezes well and makes incredible meal prep. I boosted up the veggies in it a lot so it’s full of flavor and fiber, too.

Light, tasty and healthy, fish is perfect for any summer meal. It takes only a few minutes to cook and its mild taste can be a background for a spectrum of flavors. No wonder the healthy Mediterranean Diet includes lots of fish.
